Our Story

GM Banh Mi began with family.

The name GM comes from my brother, Gia Minh. He was a young chef who cared deeply about his craft and worked hard for the future he was building. He passed away too soon, but what we shared — our childhood, conversations about life and love, dreams for the future, and the values we grew up with — has stayed with me.

When we opened our little kitchen in Madison, I wanted to build something that could carry a part of that forward. A place where food is made with care, people are treated with care, and there is always room to learn, create, and grow.

We began with bánh mì, but GM was never meant to be defined by one dish. Our kitchen continues to grow with us, shaped by the food we know, the things we discover, and the people we meet along the way.

And as GM grows, we hope to give more, too — to our team, our community, and others finding their own way forward.

GM is more than a name. It is something we carry forward.
