It starts with the bread.
Crisp on the outside, light and airy within. We bake our bánh mì in-house and fill it with flavors rooted in Vietnamese cooking.
But GM is more than bánh mì. It’s our little corner of Madison for sharing the food we grew up with — from phở and familiar favorites to dishes that change with what we feel like cooking.

Our beef broth is slow-simmered in small batches, layered with carefully selected spices and aromatics . Clean, deeply savory and made to let the broth speak for itself. Served with our house-pickled onion and garlic for a bright, punchy bite — especially welcome on a Wisconsin day.
On weekends, we take it a little further: our special phở comes loaded with tender short rib and roasted bone marrow for an extra-rich bowl worth slowing down for.
